Cookery – December 2012 & January 2013

My monthly(ish) reporting of the delicious or not so delicious things I made in December and January. If the recipe is mine, meaning I made it up, I will link to my cooking blog, heidikins cooks. Appetizers

Spinach Dip: I have started adding in quite a bit of Greek Yogurt to the sour cream/mayo base of this dip, it is marvelous. If you want to spoon it onto sliced cucumbers, or red bell pepper sticks, or sliced jicama you can get your lower-carb “resolution-friendly” version.

Cupcakes

Pomegranate Cupcakes with POM buttercream: Fail. The frosting was delicious, but the cupcakes were disgusting. I threw every single one away. They were fluffy but tasted like cardboard. Do not attempt.

Dinner

Spaghetti Squash with Chicken (Pork Chops), Peppers, Artichoke Hearts & Sun-dried Tomatoes: This was amazing. Granted, I didn’t make it exactly as written, I added some sliced zucchini because I had it, and some mushrooms, and a handful more spice (oregano, rosemary, dried mustard, Emeril’s Essence), and I doubled the artichoke hearts, and I used sliced pork chops instead of sliced chicken because I don’t like chicken. But, this was a delicious meal that I will definitely be making again. At least, some variation of it. Also, if you have never tried spaghetti squash I would recommend it. Roast it for 15 minutes longer than you think you need to, and definitely add the water to the roasting pan. The “noodles” were so deliciously tender and provided an excellent base to all the vegetables. Delicious.

I like spaghetti squash and hate that I can’t buy it over in Germany. the recipe sounds really good!

Really? Is it an American/western hemisphere product? I had no idea. It’s been fun to experiment on what I can add to it to make it less, well, squashy. :)
